Age calculation

(1) Where a veterinarian responsible for a cattle slaughterhouse or a rendering plant cannot access any records detailing the age of slaughtered cattle the veterinarian shall determine the age of the cattle slaughtered by using the incisor dentition method. (2) Where a register kept in accordance with these Regulations does not record the age of slaughtered cattle the veterinarian responsible for a cattle slaughterhouse or a rendering plant shall classify the risk according to the oldest age that the cattle could have been. etc.
